Zabet's Cheap Eats #3

Italian Red Beans

Seriously, it's hard to get a good up-close photo with the iPhone, and beans all kind of look the same... Believe me that these don't taste anything like the last batch. Also, these are on the stupidly simple side.

1 lb dried red beans ($1.19)
2 Tbsp Italian seasoning
2 tsp salt
4 cups water
8 oz spicy Italian sausage ($1.25)
2 onions, chopped ($0.88)
1 cup vegetable broth ($0.88)
8 oz small pasta (pick your fave; $0.85)

Soak beans overnight in cold water. Drain and rinse before cooking.

Put beans, salt, and Italian seasoning in a stock pot with water.

Brown sausage and onion, use the veggie broth to lift up any browned bits sticking to the pan. Add the broth-onion-sausage concoction to the beans.

Let simmer, covered, for about an hour. Let simmer uncovered if it's soupier than you'd like; give it a blend with your immersion blender if you'd like. If you have any fresh spinach on hand, this would be a great time to throw some in to cook about 5 minutes before serving. (I didn't, alas.)

Cook pasta according to directions and serve covered with beans.

This recipe makes 4 - 6 servings, depending on your beans:starch ratio of each serving.
Total cost for the whole shebang: $5.05
Total cost per serving: $1.26 - $0.84
