Zabet's Cheap Eats Short Sweet Stop

I wasn't really ever planning on including desserts in this, as I think of dessert as kind of a not really necessary thing when you're in "Oh dear Gods, my budget!" mode. (You should see the hairshirt I've been wearing around the house, too, hee.) But I bought this ricotta cheese for stuffing green peppers (which didn't happen; I'll explain that in another Cheap Eats post) and then I found myself with a pound of organic strawberries for which the Co-op seems to have forgotten to charge me. Both cost $4, so I put them together into an $8 dessert that magically only cost $4. Besides, I had to do something with them. Can't just let it rot in the fridge!

30 oz. low-fat ricotta ($3.99)
1/2 cup confectioner's (powdered) sugar*
1 tsp vanilla extract
1 tsp ground cinnamon
organic strawberries, rinsed and halved (free!**)

Dump everything but the strawberries into a mixing bowl. Mix well. Scoop onto plates and garnish with strawberries.

The best part is that you can store the leftover in the container the ricotta came in!

Makes 8 half-cup servings.
Total for the whole shebang: $3.99
Total per serving: $0.50
*Those cutting back on sugar can try these options:
Reduced sugar: 1/4 cup powdered sugar and 4 packs of Splenda
No sugar: 8 - 10 packs of Splenda, to taste
(You know in 10 years we're all gonna find out that Splenda does something horrible to us, right? Ok, so long as we're all on the same page.)

**You realize, of course, that owning a share of the Co-op means by Saturday I'll feel so guilty about this free-strawberry oversight that I'll go down there and pay for them. But for now, just let me revel in their free-ness.
