Zabet's Cheap Eats

Ok, since we really suckerpunched our budget to get Hubby to Puerto Rico (and to eat so well while there), we are now having to give serious thought to making our dollar stretch to the end of the month. That's the good thing about the bankruptcy: it really makes a household budget quite simple. You have your mortgage, car, utilities, and meds; the rest of your budget is for food, but since you can eat pretty cheap you can squeeze entertainment and travel dollars out of that part of it.

Since I'm determined to not fall into the familiar college-days ramen trap, I figured I'd blog about the tasty and cheap dishes I'm making lately. I'm two meals in already, and I didn't keep exact records on the cost, so I'll estimate it for now but give exact costs on later meals. Same goes for pictures; I don't think you'd fancy me regurgitating my tasty lunch just for a photo op.

I'll start this weekend. I have no idea how many of these posts I'm going to make, so enjoy them while they last! For now let me tell you what I expect a minimally-equipped kitchen to have:

* plastic wrap
* aluminum foil

* scissors or shears
* whisk
* wide and narrow spatulas (preferably silicone)
* wooden and metal spoons
* measuring spoons
* measuring cups or scale for dry ingredients
* large pyrex measuring cup for liquid ingredients
* set of sharp knives in various sizes
* cutting board

Pots and Pans
* colander or strainer
* baking sheets (with and without rim)
* cooling racks
* mixing bowls in various sizes
* 5 qt (or larger) stock pot
* 9x13" glass baking dish
* 8x8" glass baking dish
* one or two small saucepans
* nonstick frying pan

* immersion blender (a MUST if you're into soups, stews, beans, etc., but usually regular blender or even a potato masher or a ricer will do in a pinch)
