Zabet's (Not So Cheap) Eats: Pan Cake

I love pancakes but hate standing at the griddle for 20 minutes, watching the first pancakes get cold as I flip the last few. Laziness is truly the mother of invention. I give you: Pan Cake (photos to come)

1 tbsp of real butter, room temperature
2 cups reduced-fat Bisquick
2 large eggs (or egg substitute)
2 cups low-fat buttermilk

Preheat oven to 350ºF. Grease either an 8"x8" glass baking dish or a 9" glass pie dish with butter, covering thoroughly and thickly.

In a medium mixing bowl, combine remaining ingredients and whisk together until no lumps remain. Pour into prepared dish.

Bake at 350ºF for 35 minutes or until a fork inserted in the center comes out mostly clean.

Slice and serve with your favorite pancake toppings. (Personally, I just like a little butter and glass of OJ on the side.)

Makes 4 servings. I've not doubled this, so if you want to serve a crowd, I'd recommend experimenting beforehand or use two 8"x8" dishes/9" pie dishes side-by-side in the oven.

Also? Visually, I like it better made in the 9" pie dish.
